Basic pH.<\/p>\n<p><b>Exposure of the vineyard:<\/b><br \/>\nSW<\/p>\n<p><strong>Altitude of the vineyard:<\/strong><br \/>\n160 m AMSL<\/p>\n<p><strong>Training system:<\/strong><br \/>\nsimple Guyot<\/p>\n<p><strong>Average age of the vines:<\/strong><br \/>\n25 years<\/p>\n<p><strong>Vine density:<\/strong><br \/>\n5,000 vines per hectare<\/p>\n<p><strong>Yield:<\/strong><br \/>\nless than 1 kg per vine<\/p>\n<p><strong>Harvest:<\/strong><br \/>\nthe grapes come from the central part of the historical <em>Vigna del Pino<\/em>. After a light trimming of the clusters in mid-July, we did an additional trimming just before the harvest. The grapes were hand-harvested in 15 kg boxes, carefully selecting the best ones.<\/p>\n<p><strong>Vinification:<\/strong><br \/>\nfoot stomping of the whole bunch to gently crush the grapes. Natural fermentation with indigenous yeasts in a truncated cone oak vat (untoasted French oak). 10-day maceration. During the maceration, the wine is punched down or pumped over several times depending on the kinetics of the fermentation. Additional 8-day maceration after the end of the fermentation. Natural malolactic fermentation in second and third-use barriques in the spring following the harvest.<\/p>\n<p><strong>Ageing:<\/strong><br \/>\n8 months in French oak barriques; 6 months in stainless-steel vats before bottling and no less than 12 months in bottle before release.<\/p>\n<p><strong>Sight:<\/strong><br \/>\nruby red colour with garnet highlights.<\/p>\n<p><strong>Nose:<\/strong><br \/>\nintense, with notes of spices, ripe fruits of the forest, peculiar balsamic overtones (pine and sage) and a closing note of Seville orange.<\/p>\n<p><strong>Palate:<\/strong><br \/>\nfruity, fresh, fragrant and well-balanced, perfectly true of the grape variety. Very elegant and balsamic, with an acidity which makes it very promising for ageing.<\/p>\n<p><strong>Ageing potential:<\/strong><br \/>\nover 20 years<\/p>\n<p><strong>Vintage:<\/strong><br \/>\n2021<\/p>\n<p><strong>Date of harvest:<\/strong><br \/>\nSeptember 3rd 2021<\/p>\n<p><strong>Date of bottling:<\/strong><br \/>\nJune 16th 2023<\/p>\n<p><strong>2021 production:<\/strong><br \/>\n3,022 bottles (0,75 l).<br \/>\nAlso available in magnum format (50 bottles) and J\u00e9roboam format (11 bottles).<\/p>\n<p><strong>Notes about the 2021 vintage:<\/strong><br \/>\nclassic vintage, in line with the last vintages. It was characterised by an early flowering, with a good level of rainfall in May, and a medium-hot and dry summer. The harvest was slightly anticipated, with remarkable temperature variations between day and night and notably cool temperatures near the end. The correct timing of the harvest ensured a good aromatic expression and excellent acidity values for all the wines.<\/p>\n<p><strong>Analytical data:<\/strong><br \/>\n&#8211; alcohol: 14.40% vol<br \/>\n&#8211;
