The harvest is done rigorously by hand and using crates, to maintain the integrity of the bunch and with a careful selection of the bunches. Before the harvest, we carry out a light leaf-stripping to give the bunches better exposure to the sun, so as to obtain a correct ripening of the colouring substances, too.
Vintage time varies from the end of August to the beginning of October, depending on how the season goes, the grape variety, the lie of the land and vineyard exposure. We proceed with the harvest only when, through specific analyses, we achieve the predetermined values for the type of product that we are going to vinify.
